• Recipe: A Knights Rations

    Somewhere between a roast and stew this delicious dish is perfect for any adventurer looking for a simple but hearty meal full of protein and flavor on the trail.

    Easy peasy one pot with minimal tending required!

    A Knights Rations

    1 lb chicken (bone in, skin on parts of choice)

    4 large carrots rough cut

    1 med yellow onion rough cut

    1 lb tiny/fingerling potatoes skin on

    6 oz mild Italian sausage

    4-5 cloves garlic chopped

    2-3 sprigs fresh rosemary

    A few glugs of worchestershire sauce

    salt and pepper 

    Heat a large heavy bottomed pot over med high and add a few glugs of oil, sear until golden brown, tossing a few times until toasty on all sides, set aside, add a bit more oil if needed and add in your carrots, onions and potatoes. Once fragrant and slightly softened add in the sausage and garlic, stirring frequently. Season everything generously with salt and pepper and de-glaze with worchestershire, 4-5 good glugs. Add the chicken and rosemary into the post and add just enough water to almost cover everything. Let simmer with the lid on stirring now and again until the carrots and potatoes are fork tender (but not mushy).

     Optional: A few ounces of wine and a couple pats of butter make this dish extra rich!
